Bali is not only famous for its tourism destinations, but also its coffee commodities. One of the areas that used to produce robusta coffee is in Baturiti Tabanan sub-district, but since Covid-19, many coffee plantations have been converted into vegetable farms for faster harvests. This has eroded the coffee potential of this village. What is increasingly rare is the habit of coffee farmers before going to the plantation in the morning, namely ngidu (warming the body near a traditional fireplace) while drinking kawa tea (tea from coffee leaves). The facts show that the coffee plants that are still in the area are no longer the main commodity, they are left to grow wild or as a means of education in agrotourism facilities. This gave the author the idea to utilize the waste of cut coffee leaves to then be used as raw materials for Balikawa (coffee leaf tea) which can be a food souvenir commodity from Baturiti. Coffee leaf tea contains high antioxidants, low caffeine content compared to coffee beans, and has many health benefits. This service is important to do because in addition to saving traditional recipes that are almost extinct, this service also produces well-designed products with story telling that can be used as typical Baturiti souvenir commodities.
